Un-Screen to Un-Wind

Does your nightly routine leave time to unwind?  Do you simply double check the alarm on your phone, plug it in and turn off the light?

The challange placed before a lot of us is to put down the phone, tablet, laptop and/or turn off the telly at least 30 minutes before going to bed.  I have seen little interviews with “doctors” on TV stating that this is something that would be good for us to do.  Something about color light signal and communications in our brains effects getting to sleep and how effective the sleep you do get is….or something.  Persons smarter than me have been writing articles for years, apparently.  Like 6+ years – what can I say – I am a bit slow.

Cheesy Chickpeas

I put this together the other night and I thought I would share.

2 cans Goya Chickpeas
1/4 – 1/2 cup shredded cheese of your choice – I used a 3 cheese blend
2 tablespoons grated parmesan [kraft green can]
salt, pepper, garlic, oregano – to taste

Mix together and dump into an oven safe container – I used a pyrex. Bake at 375 for 20-30 minutes until chickpeas are hot through and the cheese has melted.

Makes a yummy side dish for pretty much anything.  My kids love anything when you add cheese.  If you wanted to make it a main dish you could always add more chickpeas and any kind of diced meat to turn it into more of a casserole.  Chickpeas are more versatile than most people think.

How many books to read in 2016

It is a new year and it is a new Goodreads challenge.  I started late in May last year and set a goal of 50.  I hit 35 books by year end.  Not sure how I hit 35.  This year I decided to start with the challenge of 20 books for the year.  Some of you avid readers will scoff at the puny number.  I figure, when I get close, I will up the ante.  I am reading using any and all media necessary – Audio, Digital and Physical and my library card is simply on fire!  I am telling you – a library card can save your purse!  My local library also has e-books that I can read on my Nook.  Love it!

As usual I have found two series to start my year with – the first being The Mortal Instruments.  I know, I am a bit behind and after the first book I must say the movie was dreadful.  Book 2 and 3 are currently en route to my library.  While I wait – I am listening to “Confessions of a Shopaholic” by Sophie Kinsella and I am reading “The Tennis Party” also by Sophie Kinsella writing as Madeleine Wickham.

I still go to the bookstore – But I usually end up scanning the bar codes into Goodreads and reserving them at the library!


Broccoli Patties

I have seen recipes for Broccoli bites, broccoli tots, patties etc.  When I opened my Cuisinart I immediately began thinking of all the things I wanted to make with it.  My first was broccoli.

The recipes I have seen have you make the mixture and shape them into patties on parchment to bake but making you turn them over halfway through.  The turning over is usually where my plans go to hell and take the meal with them.  So I went my own way.

My take on “Broccoli Patties” is listed below.  Pardon the pictures – they are less than photographer worthy but they are my own.  At the end I paired the veg with a lovely filet of Cod – seasoned with lemon and Old Bay.
